A n innovative women- owned world-class luxury destination i s c o m i n g t o Round Top, set to be developed on a prime 74-acre parcel of rolling farmland through 2022. The Farm at Wellville, sited on a bucolic tract with existing barns, will be home to casitas, farm-to-market culinary offerings, a pool, and spa, with helpings of mindfulness and meditation included on the health and wellness menu. The three co- owners gave PaperCity a personal walk-through of their first pop- up venue on the property during Round Top's Winter Antiques Show in January, with retail, bites, a sound meditation, and an installation by Texas artist Tara Conley. Houston- based Lisa Pope Westerman (founder of Lucid, a design collective known for putting together design- creative dream teams) and Erica Levit are former PaperCity magazine editors, and they've partnered with Austin architect Amy Robins Dempsey on The Farm at Wellville — the trio's debut development project. Pope Westerman says, "We're currently in the first stages of planting the seeds and are excited to share what's to come." You can experience the vision at The Farm's second pop-up, timed to the Round Top Spring Antiques Show this month. At the top of the bill will be a site-specific public art installation by internationally shown, Oklahoma artist Rachel Hayes, who's known for her poetic deployment of textiles in the landscape. Hayes' project for The Farm is one element of a three- part artwork, "Slant of Light," on view during the Spring Antiques Show and curated by Piper Faust of Piper Faust Public Art; Faust gives art tours at The Farm at Wellville on Saturday, March 27, 11 am and 1 pm. Also shop retailers City Boots, handcrafted in Old Mexico by a fourth-generation family-owned factory; Garment Modern Vintage, specializing in rare designer vintage from the 1970s through the early 2000s; Lovely Bird, sustainably produced one-of-a-kind hats; Second Chance Custom for hand- built home goods; and modern prep Saint Shore. Take in meditation and mindfulness sessions from Unwind Studio, as well as caffeine and baked goods from Teal House Coffee & Bakery. Catherine D. Anspon M elissa Ellis and Wimberly Shook Tribble both just really love cheese — and Round Top. Ellis opened Melissa Ellis Fine Art gallery and boutique in Henkel Square in the fall; Tribble's corner store, Wimberly Inc., is a stone's throw away. Now they've teamed up to open Little Cheese Shop in Round Top in a petite 1830s cottage, also in Henkel Square. "This is something we think Round Top really needs," Ellis says. "A European-style cheese shop with all the extras." At Little Cheese Shop, you can pick up fine fromage and everything that goes with it, from charcuterie (salami, prosciutto, pâté, mousse, smoked salmon), to chocolate, spreads, chutneys, olives and pickles, crackers and flat breads. Don't forget the vino! Chilled rosé such as Whispering Angel and other red, white, and sparkling wines are available. We pressed Ellis and Tribble for their favorite fromage — Ellis named Délice de Bourgogne, and Tribble recommends Humboldt Fog.
