The late chef Joël Robuchon once told Food & Wine that a restaurant that earns one star can see a 20 percent rise in its business, and 40 percent for two stars; with three stars, business can double, and the restaurant can attract a higher level of personnel. In Texas, it's been reported that all five visitor bureaus, combined with the statewide tourism group Travel Texas, collectively paid $2,700,000 to secure the publication in the state. STAR-STUDDED Joël Robuchon had the distinction of earning a total of 31 Michelin stars. Runner-ups include French chef Alain Ducasse (21 stars) and British chef Gordon Ramsay (17 stars). GRAZING STAR T hen there are the stories of chefs who walked away from the distinction due to the pressure. Marco Pierre White, the first chef to renounce the three stars given to his London restaurant, was reputedly disillusioned by the toll it took on his personal life. Sébastien Bras, scion of chef Michel Bras, gave back the three stars that he and his father received, along with the intense pressure required to keep them. In 2021, the Michelin Guide modernized and put their reviews online at guide.michelin.com. Today, Michelin's U.S. destinations include New York, California, Florida, Colorado, Atlanta, Washington, D.C., and now Texas — however, three stars does not come easily. In New York, only four restaurants have earned a trio of stars (Masa, Eleven Madison Park, Le Bernardin, Per Se); in San Francisco, only three (Benu, Quince, Atelier Crenn); and in Chicago, only two (Alinea, Smyth).
