Brooke Hortenstine 7 TUNNEL VISION Celebrating its third anniversary, Capella Pedregal — the resort carved into the hillside of Cabo San Lucas — caters to the Mexico modernist. Encompassing 24 mountainside and oceanfront acres, the property is reached only via a 300-meter rock tunnel carved through a mountain, with lanterns lighting the way to the hotel's courtyard. Book one of the 66 rooms — all with private plunge pool and fireplace — or, for families and larger groups, secure one of the 31 shared-ownership residences or 20 private "casonas." Situated between the rooms and the residences is the 12,000-square-foot Auriga Spa, where treatment pods float on a private pool surrounded by a waterfall, and guests are encouraged to swim to their appointment. Of the three culinary spots on the property, El Farallon (Spanish for "where the cliffs meet the sea") is the most dramatic, with ocean mist blanketing tables while guests dine on the bountiful catch of the day.
