A bove the winding trails that run t h r o u g h t h e urban woods of Buffalo Bayou P a r k p e r c h e s an airy, glass- walled tree house formerly known as The Dunlavy. Emerging out of the pandemic, this former events venue has been thoughtfully reimagined by (Continued) enlightened concept creator Grant Cooper as Flora, a restaurant with a fresh take on what Mexican food could be when it's stripped down clean. Recently Cooper and his former partner, chef Charles Clark, announced they have parted ways. The duo (who opened the wildly popular but now-shuttered Ibiza in 2001) amicably divided their holdings. Cooper walked away with Coppa Osteria, Gratify, and The Dunlavy, while Clark is now the sole proprietor of Brasserie 19. "I'm always working on a new concept," the ambitious Cooper reveals. "At any given time, I might be conceptualizing four to five completely different restaurants, from fleshing out the menu to the decor to the graphics to searching for just the right location."
