SUPER CHEF Many chefs found themselves paralyzed by the double whammy of forced coronavirus shutdowns and Black Lives Matter protests. But Jon Bonnell became energized. When protesters disrupted patio dining at his Waters Restaurant, he brought his own protest signs out and held them up in support. This turned a tense scene into one in which hugs were exchanged. Hotel Revel opened quietly this summer in Fort Worth's Near Southside neighborhood, but it's already catching on. Cast & Hook Seafood Kitchen & Raw Bar opens there in spring 2021, and the Amber Room speakeasy will add more of a scene. Fort Worth has grown into the 13th largest city in the country, but it's lacking in showcase hotels. Perez's newest Enchiladas Olé at 9005 North Tarrant Parkway is set to open mid- September, and a third Enchiladas Olé is headed for Southwest Fort Worth.
