Anspon W hat began as a tiny roadside fruit stand in Fredericksburg in 1969, operated by Mark Wieser out of an 1870s-era log cabin known as Das Peach Haus, has grown into a gourmet specialty foods empire with international reach. As a 15-year-old, Case Fischer began harvesting peaches and other produce during the summer; in 1986, just before graduating from Texas A&M, he became co-owner of Fischer & Wieser Specialty Foods. That's when the fun began — an historic store, cooking school, wine tasting room, wedding venue, guest houses, and the new Dietz Distillery, led by second-generation Dietz Fischer and sister Elle Kate Fischer, along with the original roadside fruit stand stocked with their beloved peaches from the orchard (the original one was planted in 1928). In 1996, the product that launched a thousand sauces — and brought Fischer & Wieser into gourmet shops everywhere — was the Original Roasted Raspberry Chipotle Sauce ($9.95) which won the Oscar of the specialty food world: Outstanding New Bestseller from the Specialty Foods Association. Hostesses from across the state stockpiled bottles as a pantry staple, pouring it over cream cheese. "It became the national hors d'oeuvre of Texas," co-owner Deanna Fischer says, laughing. "Before that, we were just another regional jelly company." Demand and recognition grew. So did the product line. While the web address is still simply jelly.com, Fischer & Wieser now includes more than 150 sauces, salsas, condiments, jams, jellies, appetizers, pasta sauces, soups, meal starters, and wine. The legendary brand is popping up at the Round Top Spring Antiques + Design Show in a shop at The Halles (March 29 – April 2), with their best sellers in tow, including the iconic Original Roasted Raspberry Chipotle Sauce, along with tastings of their wines.
