24 J ust shy of 9 am, a line stretches out the door of Commissary downtown, wrapping around the bright-blue, porcelain- tiled building on the corner of Main and Field streets. Headington Companies' new cafe, bakery, and butcher shop is the kind of urban delicatessen Dallas has lacked for a long time. Breakfast here is not pretentious, but every inch perfection. There are croissants with ample flakiness; no- nonsense egg sandwiches on toasted sourdough; espresso and coffee to be frothed into lattes, macchiatos, cappucinnos, or Americanos. Oh, and the bagels are hands down the closest you'll come to a New York-style with a schmear. The interior reflects the exterior, with large windows and artist Jorge Pardo's blue mosaic-tile floors and walls, and cases are packed with grab-and-go snacks and jams. There's an explanation for this flawlessness — and for Commissary's quick embrace by the neighborhood: Everything is made in-house. Before opening to the public, Commissary was known only to insiders and those involved in the daily operations of Headington Companies' restaurant portfolio as the place where breads and house-cured meats were made from scratch for Wheelhouse, Sassetta, CBD Provisions, Mirador, Victor Tangos, The Porch, The Joule, Weekend, Americano, T Room, Midnight Rambler, Copper Bar, and Front Room Tavern. Now, we can casually dine at the source. Commissary's rotisserie and lunch menu offers deli-staple sandwiches (meatball subs, French dips, chicken salads, turkey clubs), pastas, and salads. As with most impressive operations, there's more than meets the eye. Beneath the 2,500-square- foot ground floor, a massive Empire MecaMATIC tunnel oven bakes up to 150 fresh loaves per batch; a wine cellar houses 5,000 bottles of vino; and a walk-in dry-aging cooler is packed with charcuterie.
