BUBBLES A s guests strolled through the Manor House of The Houstonian Hotel, Club & Spa with champagne flutes in hand, the tableau was a vision of summer with most guests abiding by the invitation to the mid- day fête to dress in white. Bubbles flowed during the champagne competition and caviar tasting that preceded a high tea/brunch that spread throughout the historic Manor House. The Houstonian Hotel's executive chef Gonzalo Campos and banquet chef Jonathan Cooke, who hails from England, reminded guests that afternoon tea service was introduced in the 1840s by the Duchess of Balfour who tended to get a bit peckish between lunch and dinner. This day's event, he said, was an elevated tea service à la those at London's Ritz, Dorchester, and Savoy hotels.
