I t's been a glamorous 95 years in Dallas for The Stoneleigh. With the unveiling of Perle on Maple, the storied hotel starts a new chapter — the last piece of the hotel's extensive renovation, which included a restoration of the historic 11th and 12th floors (aka The Penthouse), led by Studio 11 Design. The modern vibe is a refreshingly far cry from the old-world air of Stoneleigh restaurants of the past, with Perle on Maple's executive chef Wade Burch serving up a charming amalgamation of French bistro-style fare with flavors that call to mind the Deep South. Top honors go to the Colorado lamb with ratatouille and polenta, the bacon-wrapped local quail, and the Duroc pork belly. While the latter emerged as the unanimous favorite from Perle's debut dinner service, it's the cocktails — the Lickety Spritz, a sweet elixir of gin, prosecco, Aperol, lemon, and rose simple syrup, to be exact — that have us returning for more.
